These delicious almond gluten free cookies are super delicious and super easy to make.

  • 150g butter
  • ¾ sugar
  • 1 tsp almond essence
  • ¾ cup rice flour
  • ¾ cup fine yellow cornmeal
  • 1 tsp baking powder
  • ¼ cup of chopped almonds

Melt butter and sugar gently. Remove from heat. Add essence, rice flour, cornmeal, and baking powder. Mix well. Roll into balls place on greased baking tray. Flatten with a fork. Press chopped almonds onto each cookie. Bake 190C 12-15 minutes.
