Gluten free cookies with ginger  is one of my favorite recipes – the whole family loves them!

  • 175g butter
  • ¼ cup golden syrup
  • 1 cup of sugar
  • 1 egg
  • ¾ cup rice flour
  • ¾ cup fine yellow cornmeal
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp cinnamon

Melt butter and golden syrup gently in a large saucepan. Take off the heat and stir in the sugar. Add the egg and beat well with wooden spoon. Add rice flour, cornmeal, and spices. Form into balls. Roll each ball in sugar which you will have in a saucer nearby. Place on greased baking tray, and flatten with a fork. Bake at 180C for 12 minutes.
